It’s officially corn season!!

Everywhere you look these days, you see the yellow goodness of corn (aka maize).

Golden like the sun, corn is making many Nigerians happy this season. There are many ways we incorporate corn into our various delicacies. I can bet you’re probably familiar with one or two of the following ways we eat corn in Nigeria: Below...

1. Corn and Pear

Depending on your preference, you can have your roasted/boiled corn with pear. You can roast or even boil the pear. This is a hearty meal for every Nigerian.

2. Pap

Not many know that the popular Pap (akamu/ogi) is made from either yellow or white corn. The red pap is made from millet. Don’t tell me you’ve never enjoyed pap and Akara on a cool Saturday morning?!

3. Corn and Coconut

This is also another favourite of mine and many other Nigerians. Again, the corn can be roasted or boiled. Then add some coconut to get to tasty heaven.

4. Corn Meal

This is very similar to any traditional Nigerian swallow. In the North, this cornmeal is called Tuwo Masara. And Nnioka in the Eastern part of Nigeria. You eat this with soup like you do with semo, eba and pounded yam.

5. Corn and Beans

No mention of meals made from corn is complete without mentioning corn and beans jollof. It looks, smells and tastes amazing.
